1. Preservative properties of potassium cinnamate

Potassium cinnamate is a natural cinnamon extract, which is widely used in food because of its good solubility. Its preservation mechanism is the conversion of potassium cinnamate to cinnamic acid under acidic conditions. Cinnamic acid is a weak acid with a PKA between 4.37 and 4.44. Its anti-microbial action depends on the form of most of the united acid molecules. When dissolved in water, the weak acid does not completely ionize into ions, but forms a balance between the charged and ionic form and the uncharged and united form. These two forms are proportional to the Ph value of the solution. The more acidic a solution is, the more non-ionized forms there are. 

Since the 1950s, it has been known that cinnamic acid acts by inhibiting the use of L-phenylalanine and tyrosine by microorganisms. In its non-ionic form, cinnamic acid is thought to be soluble in microbial membranes as a weak acid preservative, enters cells, ionizes at higher Ph values, thus lowering internal Ph values and can effectively affect the activity of many important enzymes So it will eventually kill contaminated cells.

2.  Anti-tumor

Potassium cinnamate has antitumor effects and antimutagenic activity in vitro. It inhibits various tumors induced by carcinogens in rodents. It was found that cinnamic acid, the active ingredient of potassium cinnamate, inhibits the proliferation of cell lines such as glioblastoma multiforme, melanoma and hormone-insensitive prostate cancer.

3.  Lowering blood sugar and blood lipids

KANG-BEOM KWON ET AL administration of potassium cinnamate for 7 days had no significant effect on the blood glucose level of mice in the normal control group. The mice in the treatment group had a significant hypoglycemic effect The blood glucose levels in the high, medium and low dose groups decreased sequentially, showing a dose-effect relationship. Plasma insulin levels were also significantly increased (compared with the control group (P 0.01) , showing a dose-effect relationship.
